What I Ate Wednesday..

Yet another yummy week here, folks. 

Let's just jump right in, shall we?

First up, I went for super quick and easy. Cuz I'm pregnant and some mornings I really don't feel like doing a damn thing in the kitchen. Sorry, not sorry! So on a day when I have some extra energy, I'll hard boil a ton of eggs, and cook up a big batch of bacon in the oven, and package it all up. Boom. Done. And yes, I ate more than two blackberries. I was hangry and started eating before I took the pic. Oops.

Next up, we have one of my absolute favorite keto foods.. Fat Head Pizza. I use the older recipe that uses almond flour and I omit the egg. Cuz that's just how I roll. Top it with taco toppings and Mmmm baby baby! So. Freaking. Good. 

Moving right along...  White Chicken Chili. This is total comfort food that is beyond perfect for any cold dreary day. I usually use a bit of xanthan gum to thicken it up a tad, but that's totally optional. 

And last but certainly not least, Loaded Cauliflower Bake. I am not a fan of cauliflower. Like, at all. But cook it up like this and I become it's #1 fan. It tastes like potatoes. I know, I know, I always rolled my eyes when people would say that, too. But it's for real. Try it! You just might be surprised!

15 Things To Do On A Snow Day

Think back to snow days from when you were a kid.. 

Waking up and peeking outside to see the world you knew covered in a thick blanket of snow. Huge drifts of snow as far as the eye could see was a thing of beauty. It was pure magic and you couldn't wait for all the fun that was sure to unfold! 

Now, as an adult with responsibilities and To do lists as long as your arm, snow days are usually seen as a pain in the royal ass. I get it.. I do. It's time off work and that's money out of your pocket. But we get so wrapped up in day to day adulting, that sometimes I think we just NEED the reminder to slow the hell down. 

To see the magic again and to live in the moment.

I'm going to be honest... even as an adult, I still freaking LOVE snow days. Which is funny, because I hate snow. See, I hate having to drive in the snow. And I hate being out in the snow cuz it's cold. But I love snow days cuz the kiddies and I don't have to do anything. There's no schedule to adhere to and we can just kick back and chill on the couch watching movies and drinking hot chocolate all day if we want to. Seriously, it doesn't get any better than that! 

Of course they would no doubt get bored after a while. (Really? I could do that all day. For real.) So here are 15 things to do during a snow day:

1) Read a book. Yes, that's my #1. Because people just don't read enough nowadays! And I personally love getting lost in a good book.

2) Pajama Day. Stay in your jammies all day while snuggled up under a blanket watching movies. (Extra points if you add hot chocolate to this scenario!)

3) Bake all the yummy things!! You KNOW you have like 3,147 recipes that you've pinned but have yet to have the time to try out. What are you waiting for?! A snow day? *ahem*

4) Lay down a blanket and have an indoor picnic on the living room floor.

5) Teach yourself a new skill. Knitting, crocheting, drawing, painting... etc. You can find resources online that teach you how to do just about anything your heart desires!

6) Play a board game or 10.

7) Get artsy and take pictures of all the snow covered things!

8) Make homemade Valentine's.

9) Two words: BLANKET. FORT.

10) Have an epic snowball fight.

11) Do you wanna build a snowman?? Go do it!!

12) Go sledding!

13) Make snow art!  (The kiddies had SO much fun doing this.. tho next time, I'd like to prepare better and use spray bottles or something. Lol!)

14) Go for a walk just to leave footprints in the snow.

15) Blast some music and have a random dance party.

As a last resort, I guess you could always catch up on cleaning the house?

Chocolate Chip Cherry Loaf..

My youngest kiddo and I were brainstorming, trying to figure out something yummy to make for Valentine's Day. 

I wanted something with cherries and chocolate. She wanted something pink.

I decided on a Chocolate Chip Cherry Loaf.. That fit my want. Originally, I figured that I could add cherry juice to my batter and it would tint the batter pink, fitting my youngest kiddie's want. That didn't quite work out as well as I hoped. In person, it DOES have a bit of a pink tint to it, but just barely. And it's not noticeable at all in my picures. BUT, my kiddo loved the flecks of cherry throughout, so in the end, she was happy. 

If you want it more pink, I'm sure you could just add a couple drops of red food coloring. I didn't feel like digging through my cabinet to find mine, tho, which is why I hoped the cherry juice would work. (Hmmm... looks like it's time to jump back into decluttering, uh?)

Color issue aside, everything came together beautifully. This makes two loaves, so we had one to send to work with daddy for him and his coworkers, and one for us at home. 

I will most definitely be making this again. 

  • 1/2 cup butter PLUS 2 Tbsp, melted
  • 3/4 cup sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 2 tsp almond extract
  • 2 1/4 cups of flour
  • 2 tsp baking powder
  • Small jar (8 to 10 oz) of Maraschino cherries
  • 12 oz bag of chocolate chips
  • Powdered sugar to top (optional) 
  1. Preheat oven to 325°. Grease two 8x4" loaf pans and set aside. 
  2. Pour the cherry juice into a measuring cup. If you have less than 1/2 cup, go ahead and add a tiny bit of water til it reaches 1/2 cup. Set aside. Chop cherries into pieces and set aside. 
  3. In a medium bowl, beat the melted (and cooled!) butter and sugar together. Add the two eggs, and vanilla and almond extracts. Beat till combined. 
  4. In a separate bowl, mix together your flour and baking powder. 
  5. Take about 1 Tbsp of the flour mixture and put into a small bowl with the bag of chocolate chips. Mix together. (This will help keep your chocolate chips from sinking to the bottom of the loaf.)
  6. Add half of your flour mixture to your butter/sugar mixture. Beat together. Add half of your cherry juice. Beat together. Add remaining flour and cherry juice and beat one last time. 
  7. Add your chocolate chips and cherry pieces and mix well with a spoon. Pour into loaf pans and bake for 40 to 50 minutes or till it passes the handy dandy toothpick test.
  8. Cool in pans then sprinkle the top with powdered sugar.
  9. Slice and eat. YUM!!

Another ridiculously yummy week of food. I am so happy that I've gotten back to Keto. I feel so much better when I eat this way. 

A bowl of berries and whipped cream is a bit higher carb than I'd usually go for, but ya know what? I'm pregnant and baby wanted this for breakfast. That's my story and I'm sticking to it.

Deconstructed Pizza Bake

Sometimes, you just want pizza. All that hot gooey cheese... the sauce.. the meat. Did I mention the cheese? Forget wanting pizza. 

Sometimes you just need pizza. 

Then you remember that you're doing keto. And you slowly die a bit inside. But that doesn't have to be!!

Tomato Cucumber Salad

This stuff is so yummy and refreshing on a hot summer day, but it's equally delicious when it's cold outside. 

Also, you can throw it together as a quick and easy side dish, or you can throw some shredded cooked chicken in with it, to make it a main dish. Not gonna lie, I do this often... cuz some nights just go that way.



Now, this isn't so much a recipe as it is 'take this stuff and throw it all together using the amounts you want.' LOL
