Deconstructed Pizza Bake

Sometimes, you just want pizza. All that hot gooey cheese... the sauce.. the meat. Did I mention the cheese? Forget wanting pizza. 

Sometimes you just need pizza. 

Then you remember that you're doing keto. And you slowly die a bit inside. But that doesn't have to be!!
There are so many low carb/keto friendly pizza options out there! Cauliflower crust pizza.. Chicken crust pizza.. Almond flour crust.. coconut flour crust.. etc. 

My absolute favorite is FatHead Pizza. It is quick and easy and you can hold a slice like real pizza. It crisps up beautifully! But sometimes, as quick and easy as it is, I just don't feel like making a crust. What's a keto gal to do?! 

You do this:



Ohhh yesssss. It may not have crust, but let me tell you.. it is ahhhhmazing! I won't make you wait for the recipe any longer. Let's rock n roll. 

  • 1 lb of Italian Sausage (ground or links with the casings removed
  • 1 small jar of low carb/low sugar pizza sauce or marinara (I use Rao's Pizza Sauce)
  • A good hand full of fresh spinach, chopped
  • 2 tsp garlic powder
  • 1/4 cup grated Parmesan, divided in half
  • 1 to 1.5 cups shredded Mozzarella cheese
  • Pepperoni and any other pizza toppings you like
  1. Preheat oven to 375°. In a skillet, over medium heat, break up and cook your Italian sausage til done. Add spinach to the skillet and cook for another minute or two, giving it a good stir.
  2. Add the pizza sauce and stir well to combine. Transfer meat mixture to a baking dish. 
  3. Sprinkle the garlic powder and half of the Parmesan over this mixture. Top evenly with the mozzarella cheese. Add your other toppings, if any. 
  4. Bake for 10 to 15 minutes or till the cheese is nice and melted/bubbly.
  5. Let sit for a few minutes and serve it up. 
I hope you enjoy this as much as my family and I do. It's quickly become a family favorite here. There's so much you can do to change this up to fit your tastes/needs, too. Have fun with it!
