The Breakfast Bake takes on many different forms, also. Meat, (ham, sausage, bacon, whatevs) eggs, and cheese; Meat, eggs, veggies and cheese; eggs, cheese, and hash browns.. You get the picture. This particular variation is our current favorite. :)
Breakfast Bake |
- 1 package of breakfast sausage (like Jimmy Deans...)
- 1 cup frozen hash browns
- 1 medium sweet potato, peeled and shredded
- 1/2 green bell pepper, diced
- 1/2 red bell pepper, diced
- 1/2 zucchini, diced
- 1/2 small yellow squash
- 1 dozen large eggs
- 1 cup shredded cheese of your choice (I like sharp cheddar but mozzarella works great, too)
- Spray 9x13 baking dish with non stick spray. Preheat oven to 350 degrees.
- In nonstick pan, melt 1 Tbsp of butter. Add the diced veggies and cook for 5 to 7 minutes. Scoot the veggies over to one half of the pan.
- Add the sausage to the same pan and cook til no longer pink. Stir veggies and meat to combine.
- Spread the frozen hash browns and shredded sweet potato in the bottom of your prepped baking dish.
- Pour veggie/meat combo over the top of the potato combo.
- In large bowl, crack all 12 eggs. Toss in a little salt and pepper and your cheese. Beat well.
- Pour the egg mixture over the meat/veggie/potato mixture. Pop in the oven and bake for 30 to 35 minutes.
