You Will Need:
- 1 1/2 cups wheat bran
- 1 cup nonfat milk
- 1/2 cup unsweetened applesauce
- 1 egg
- 2/3 cup brown sugar
- 1/2 teaspoon vanilla extract
- 1/2 cup all-purpose flour
- 1/2 cup whole wheat flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup blueberries
- Preheat oven to 375 degrees and prep your muffin tins. blah blah blah. You know the routine by now, yes? lol
- In bowl, mix together the wheat bran and milk, and let sit for 5 to 10 minutes.
- In a separate (large) bowl, mix together applesauce, egg, brown sugar, and vanilla. Beat in bran mixture.
- Sift together all-purpose flour, whole wheat flour, baking soda, baking powder, and salt. Stir into bran mixture just until blended.
- Fold in blueberries. Scoop into muffin cups.
- Bake for 15 to 20 minutes til lightly golden and top springs back when touched.
***If you want to add the streusel topping:
In bowl, cut together 2 Tbsp diced butter, 5 Tbsp sugar and 1 tsp cinnamon. Top each muffin BEFORE baking and press down a bit.
