Blueberry Bran Muffins (with Streusel Topping

Blueberry Bran Muffins with Streusel Topping, blueberry muffins, blueberry bran muffins

You Will Need:


  • 1 1/2 cups wheat bran
  • 1 cup nonfat milk
  • 1/2 cup unsweetened applesauce
  • 1 egg
  • 2/3 cup brown sugar
  • 1/2 teaspoon vanilla extract
  • 1/2 cup all-purpose flour
  • 1/2 cup whole wheat flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup blueberries


  1. Preheat oven to 375 degrees and prep your muffin tins. blah blah blah. You know the routine by now, yes? lol
  2. In bowl, mix together the wheat bran and milk, and let sit for 5 to 10 minutes.
  3. In a separate (large) bowl, mix together applesauce, egg, brown sugar, and vanilla. Beat in bran mixture.  
  4. Sift together all-purpose flour, whole wheat flour, baking soda, baking powder, and salt. Stir into bran mixture just until blended. 
  5. Fold in blueberries. Scoop into muffin cups.
  6. Bake for 15 to 20 minutes til lightly golden and top springs back when touched.

    ***If you want to add the streusel topping:

    In bowl, cut together 2 Tbsp diced butter, 5 Tbsp sugar and 1 tsp cinnamon. Top each muffin BEFORE baking and press down a bit.
