This is one hell of a yummy banana bread! I have been using this recipe for years now and highly doubt I will ever stray from it.We've become tight like that. Nice and moist, slightly buttery, laced with chocolate chips. My good God, yes, yes, YES!!
Directions:
You Need:
- 1 and 3/4 cups flour
- 3/4 cup sugar
- 2 Tbsp brown sugar
- 1 tsp baking powder
- 1/4 tsp baking soda
- pinch of salt
- 1 tsp ground cinnamon
- 1/2 cup semi sweet chocolate chips
- 2 eggs, beaten
- 4 large bananas, very ripe, mashed very well
- 1/2 cup butter, melted and cooled
- 1 and 1/2 tsp vanilla extract
- 1 cup walnuts, toasted and chopped (totally optional)
- Preheat oven to 350 degrees F and spray a loaf pan with nonstick cooking spray.
- Place walnuts on a baking sheet and bake for 8 to 10 minutes, til lightly toasted. Let cool and chop em up.
- In a large bowl, combine the flour, sugars, baking powder, baking soda, salt, cinnamon, chocolate chips and nuts, if using. Set aside.
- In medium bowl, combine the mashed bananas, eggs, melted butter and vanilla and mix very well.
- Gently fold the wet ingredients into the dry ingredients, just til incorporated.. DO NOT OVER MIX!!
- Pour into loaf pan and bake for 50 to 60 minutes, til golden brown and passes the handy dandy toothpick test. (I use a dry spaghetti noodle.)
- Let cool for 10 minutes in pan and then remove to a wire rack to finish cooling.
- Dust with a tiny bit of powdered sugar and dig the hell in!! Mmmmm!
