Breakfast Bake

     Breakfast greatly varies in our house. Some days it's a quick bowl of cereal, or a couple pieces of toast, Most days it's some form of pancakes or waffles with turkey bacon. There are other days tho, where we just need to change it up a bit. Or we get tired of the same old, same old and that's when I scan through the file cabinet in my head looking for the "new old," you know, things we haven't done in a long time. One of those, dear readers, is the Breakfast Bake.

     The Breakfast Bake takes on many different forms, also. Meat, (ham, sausage, bacon, whatevs) eggs, and cheese; Meat, eggs, veggies and cheese; eggs, cheese, and hash browns.. You get the picture. This particular variation is our current favorite. :)

Breakfast Bake




You Will Need:

  • 1 package of breakfast sausage (like Jimmy Deans...)
  • 1 cup frozen hash browns
  • 1 medium sweet potato, peeled and shredded
  • 1/2 green bell pepper, diced
  • 1/2 red bell pepper, diced
  • 1/2 zucchini, diced
  • 1/2 small yellow squash
  • 1 dozen large eggs
  • 1 cup shredded cheese of your choice (I like sharp cheddar but mozzarella works great, too) 
  1. Spray 9x13 baking dish with non stick spray. Preheat oven to 350 degrees.
  2. In nonstick pan, melt 1 Tbsp of butter. Add the diced veggies and cook for 5 to 7 minutes. Scoot the veggies over to one half of the pan.
  3. Add the sausage to the same pan and cook til no longer pink. Stir veggies and meat to combine.
  4.  Spread the frozen hash browns and shredded sweet potato in the bottom of your prepped baking dish.
  5. Pour veggie/meat combo over the top of the potato combo.
  6. In large bowl, crack all 12 eggs. Toss in a little salt and pepper and your cheese. Beat well.
  7. Pour the egg mixture over the meat/veggie/potato mixture. Pop in the oven and bake for 30 to 35 minutes. 
     Ohhhhh yeeeeah, is it tasty! Hope you enjoy!
